Fermented in an open pot with gentle daily pigeage, extended post ferment maceration and basket pressed to a second use french oak puncheon for 2 years. Bottled unfiltered and with minimal sulphur, then held back 12 months in bottle prior to release.
Layers of allspice, cherry wood, strawberry molasses and tar aromatics. Salty black basalt, aged fruit cake and fresh, black and blue berries. Proud, ripe whole bunch tannin combines with fine grained oak and ripe skins for a very complete form. This particular site exemplifies the ability of the southern part of the Heathcote G.I to exhibit an enthralling interplay between sweet and savoury. The wine dances deep into both with notable style.
