These grapes were handpicked coming from the Chalmers organic vineyard in Heathcote. 100% whole berry, wild yeast fermentation in open vats over four weeks. Early and later pump overs for a gentle extraction to retain fruit and a finer tannin structure. Pressed to seasoned barriques and aged for 11 months. Racked to tank with 40ppm sulphur added. Bottled in February 2020 with no filtering.
A balance between sweet and savoury fruit and structure. A fine-boned and fragrant expression with bright, ripe cherry fruit flavour and subtle spice and gentle tannin.
